These experimental enchiladas turned out so much better than expected! I browned ground beef with onions. Then made a separate sauce with tomato sauce, chicken broth garlic and S/P and onions. Filled corn tortillas with the beef then added sauce to the top, oh and cheese! The tortillas break a bit but not to worry it all cooks together. Then I mashed local potatoes for the bottom layer and topped with baked asparagus- bam!
