Broccoli stems CAN be used!

Here’s the deal: if it’s a green vegetable and mom likes it- I’ve accomplished my goal. Last night while eating these, she took three bites in a row without needing another food as distraction. You’ll have to try them yourself to see if they pass the test…

I Grated about 1.25 cup of broccoli stems. Then I used the shredder setting on a food processor to make life simple and threw into a medium bowl. Next I added 2 cloves of minced garlic, 1/2 chopped sweet onion, 2 whisked eggs, 1 cup almond meal, 1 Tbsp garlic powder and mixed everything together.

After heating about 2 Tbsp olive oil in a pan, I formed balls of the mixture and set them in the pan. They cooked for about 4 min. and then it’s time to flip and flatten with a spatula! (Don’t flatten until after the flip) And then another 3-4 min on this side. Bon Appetit!broccoli stems
