Fruit pizza

“And the Grinch, with his Grinch-feet ice cold in the snow, stood puzzling and puzzling, how could it be so? It came without ribbons. It came without tags. It came without packages, boxes or bags. And he puzzled and puzzled ’till his puzzler was sore. Then the Grinch thought of something he hadn’t before. What if Christmas, he thought, doesn’t come from a store. What if Christmas, perhaps, means a little bit more.”

Fruit pizza: Crust
Set oven to 350 degrees, mix together 1/2 cup almonds, chopped finely, 3/4 cup almond flour, 1 egg, 1/4 cup honey, 1/4 cup coconut oil, 1/4 tsp. salt, 1/4 tsp. vanilla, 1/4 tsp. baking soda and spread flat onto a pizza stone (about the size of a 9×13). Mine browned after about 11 min. and I let it cool completely before adding the filling: 1 Tbsp. coconut oil, 2 Tbsp. honey, 1/4 tsp. lemon juice, 1/2 tsp. vanilla, 1/8 cup coconut flour, 2 Tbsp. almond butter. Once you are happy with the consistency and flavor, spread on the cooled crust and cover with whatever fruit floats your boat!
