Preheat your oven to 325. Mix the following together: 1/2 c. coconut flour, 5 eggs, 1/6 c. olive oil, 1/3 c. of either agave, honey or maple syrup, 1/2 c. shredded zucchini, 2 ripe bananas, 1 tbsp vanilla, 1 tsp baking soda, 1/2 tsp cinnamon, 1/4 tsp salt, 2/3 c. crushed walnuts, 2/3 c. fresh OR frozen cherries- make sure you half them. Pour mixture into a loaf pan (greased) and top with extra walnuts if you’re feeling fancy (I wasn’t in photo). Bake for about an hour or so, using the toothpick test to ensure it comes out clean. Cool the loaf- in pan- on rack before cutting!
